Many of you have heard me sing the praises of the apple pies made by the Safeway near my house. Those of you who have tasted them can bear me out on this one.

Let me add one virtue to the list: they can be transported by motorcycle, in a crowded backpack, from the store to my house. Visible damage: none.

I'm getting a big kick out of this whole "no car" thing.

It was interesting to be bike-only when my car was stuck in Austin for repairs. I think I could stick with it here but it's sometimes just too convenient to jump in the car. Have you considered saddlebags or a tailbag for the bike. It might make it even easier to do full shopping. Givi might make hard luggage for your bike.

I have a rack for the bike, not yet installed. At some point I'll get saddlebags or a tailbag and then actually install it :-)

I need to learn to make apple pie, because I already know a number of fine-tuning tricks, I just haven't actually made a pie :-) I've helped other people, though. But, for instance, do you do the thing with the tapioca? Or use pears along with apples?

Anyway. Yes, we'll need to put this to the test, with one of your pies and one of theirs (or more) and possibly other judges :-)

I've helped make an apple pie with tapioca powder in it. It works pretty well. You mix it with the cinnamon and sugar, then with the apples and stuff before putting them in as filling.

But I can tell you that there was definitely tapioca in it, and that it was definitely a good pie. We didn't use already-cooked mushy tapioca, and we didn't use an awful lot, but we used it, and the pie was better for it.

Tapioca powder kind of does the same thing as corn starch or potato starch: it makes things thicken up. It really doesn't have much of a taste. If you wouldn't shudder at putting a little corn starch in your apple pie, tapioca powder shouldn't bother you. It just kind of makes the gooey appley liquid in the pie be more solidified.

(It's one of those things vegans can use as egg replacers in some baked items.)

Yeah, tapicoa in an apple pie sounds awful.
I think dutch apple pie is the way to go, with the super-sweet/buttery crumbly top crust. MMmmmmm.

Hmmmmm, warm dutch apple pie.
My adopted side of the family is dutch so I have many yummy
memories of handmade dutch apple pies.
On the other hand my other side of the family liked to eat
apple pie with cheese, which I always had trouble figuring out.

I like Safeway's sugar-free pies, especially the berry pie but I can't find them very often. Albertson's had two little sugar-free apple pies in a package that was good but I only saw them twice and now they appear to be gone.

The apple pie that none has managed to even come close to comparing with is my grandmother's. I think one of the main reasons is because she julienned her apples instead of having them in chuncks. Mmmmmm That and the amount of lard in the crust.
