Butterbeer recipes
May. 16th, 2020 07:29 pmThere are a number of different attempts at making butterbeer in various ways, trading off complexity and flavour. The easy ones tend to be roughly "a partially-melted root beer float", which is already pretty good.
Some want you to home-make what's basically caramel (soft-ball-stage sugar plus butter, cream, etc) and then mix it into a drink.
I can now say firsthand: the version where you make caramel is, in fact, better.

[Edit: and in this recipe where they say to let the brown sugar stuff cool and then add rum extract? You can also *not* let it cool before adding good rum.]
