Reminder! DHP October 31st
Oct. 22nd, 2003 06:09 pmThe Halloween party is coming up -- you have about nine more days. After that, there will be no DHP in November. December 6th is a DHP in honor of the Halifax Explosion. January 17th is the Northridge Earthquake, and February 21st is the assassination of Malcolm X.
We're busy dressing up stuffed monkeys, putting eyepatches onto skulls, purchasing stuffed parrots and otherwise taking care of business. We have the technology, the invite list, and (of course) the monkeys. The question is: will you be there, or will you be utterly pathetic?
On a more alcoholic note, the recipe for the most recent DH rum punch:
1 1/2 cups dark rum
1/2 cup coconut rum
1 cup white rum
1 cup gold rum
2 cups pineapple/orange/guava juice
1/2 cup lemon juice
1/2 cup lime juice
2/3 pineapple, cut into chunks
1 mango, slightly tart, in chunks
-----
Later, superfine sugar was added and some chilling attempted. Both seemed to be good ideas. I'm thinking a bit of grenadine will help as well. Anybody else have suggestions to help the flavor while masking the alcoholic nature of the beverage? The lemon and lime juice are absolutely excellent that way, but the pineapple chunks don't seem to help much.

Date: 2003-10-22 10:07 pm (UTC)banana (sugar, slight acid, coats)
grenadine (sugar, slight acid)
vanilla bean
(ginger seems like it might be interesting, but not necessarily correct)
pectin, gelatin (small amounts) (mouthfeel, coats)
ripe mango or papaya
Does the pineapple actually help the balance? I would expect it to help with the acid balance but be somewhat drying and astringent?

Date: 2003-10-23 10:25 am (UTC)We've got enough definite non-banana-fans that it's not an option, and I don't think riper mango would make much difference. Papaya might help since it's pretty mild, but I'm not sure how it'd go with rum. Vanilla or ginger might go really well, especially if I changed the balance of rums and perhaps added other spices -- maybe more white rum and coconut rum, less dark rum? And with a bit of cinnamon and nutmeg, perhaps. Or something odd but strong like bay leaves (rum & bay leaves is a classic mens toiletry, oddly enough, and it smells really good).
